Wynn and Encore Las Vegas feature two luxury hotel towers with a total of 4,750 spacious hotel rooms, suites and villas, approximately 192,000 square feet of casino space, 21 dining experiences featuring signature chefs and 11 bars, two award-winning spas, approximately 290,000 square feet of meeting and convention space, approximately 103,000 square feet of retail space as well as three nightclubs, a beach club and recreation and leisure facilities. In addition to two luxury retail esplanades, a Strip-front expansion, Wynn Plaza, is currently under construction and is scheduled to be completed by the third quarter of 2018.

Responsibilities :  

As Banquet Setup Manager your role will include: 

Catering and Banquet Set up Manager is responsible for a seamless operation of Wynn and Encore convention space, as well as any catering events held in private venues like restaurants, casino floor and any outdoor off property events.

  • Review all banquet functions and the Delphi diary to determine and avoid all possible conflicts.
  • Review events and Delphi diary to ensure proper inventory and supplies as necessary to support catering and convention business.
  • Responsible for scheduling and training all Banquet Setup employees.
  • Assist Catering Managers and Convention managers in planning details of event setup.
  • Prepare and submit banquet floor plans to meet fire marshal guidelines for events with over 300 guests to CCBD and manage funds in Escrow account.
  • Communicate with individual Catering or CS Manager and Banquet Captains regarding any setup issues on particular events.
  • Understand clearly the fire codes and regulations as they pertain to assembly of groups.
  • Make sure facility runs smooth and efficiently with regards to county codes for safety as well as health.
  • Co-ordinate, all Load in and load out’s with Exhibit companies, outside Vendors as well as communicate any operational challenges with Banquet Operations team.
  • Responsible for managing an annual furniture and equipment budget in excess of $400,000.00.
  • Manage and control an annual payroll of $2.5 Million.
  • Oversee and direct a management staff of Eight and hourly staff of ninety.
  • Assist Director of Catering and Executive director in generating annual budgets and forecast for the department.
  • Maximizes profits in the department through effective management techniques keeping in mind at all times guest satisfaction.
  • Any other duties as determined by Director of Banquet Operations or Vice President of Catering and Banquets.


Job Requirements

Requirements :


  • Candidates must be able to communicate, read and write in English fluently and in a professional manner (second language is a plus).
  • Candidate must be at least 18 or older
  • This position requires a college graduate or equivalent and requires a minimum of five years’ of progressive experience in convention operation or banquet operations at a high end/high volume comparable convention property.
  • Candidates must exhibit computer knowledge (including MS Office, Delphi), leadership and organizational skills.
  • Requires the ability to work efficiently and within a team environment.  Requires working early morning, late evenings, weekends and overnight shifts. Knowledge of Delphi is desired but not required.
  • This position will be responsible for handling all the Clark county fire department regulations and plan submittal process. An ideal candidate should possess a minimum of basic knowledge of fire codes pertaining to convention and catering events as well as a diagram software or AutoCAD. In depth knowledge of Clark County Fire department rules would be ideal but not required.
  • A valid Food Handlers Card from SNHD is required for this position.
