Job Description

Wynn Resorts is the recipient of more Forbes Travel Guide Five Star Awards than any other independent hotel company in the world. Wynn Las Vegas opened on April 28, 2005 and was once again named the best resort in Nevada on Condé Nast Traveler’s 2018 “Gold List,” a title received for the tenth time. Wynn and Encore Las Vegas feature two luxury hotel towers with a total of 4,750 spacious hotel rooms, suites and villas, approximately 192,000 square feet of casino space, 21 dining experiences featuring signature chefs and 11 bars, two award-winning spas, approximately 290,000 square feet of meeting and convention space, approximately 103,000 square feet of retail space as well as three nightclubs, a beach club and recreation and leisure facilities. In addition to two luxury retail esplanades, a Strip-front expansion, Wynn Plaza, is currently under construction and is scheduled to be completed by the third quarter of 2018.

The Project Manager, F&B Development assists in the execution of design and development related projects throughout Wynn Resort’s food & beverage operations.   The project manager is primarily focused on the tracking and execution of F&B Development projects that directly impact the guest experience including china, glass, silver, linen, collateral, disposables, packaging and uniforms (CGS).

 Key Responsibilities:

  • Shepard CGS related projects from design through implementation including sourcing, sampling and obtaining any necessary approvals
  • Work with operations to identify, track and communicate CGS requests and project progress
  • Communicate status updates with respective shareholders across departments
  • Partner with the purchasing department at each property to identify best in class vendors, ensure timeliness and quality and drive value to the company
  • Develop training materials and product specifications to ensure CGS is properly used and maintained by operations
  • Provide design support for new CGS projects
  • Accept, organize and track sample submissions and catalog for future reference
  • Assist with other F&B Development projects as requested
  • Maintains relevant knowledge of industry through continuing education and training
  • Collaborate across departments as needed to ensure project success (interior design, creative graphics, stewarding, F&B operations, uniform operations, etc.)

Job Requirements

  • 21 years of age or above
  • Minimum of two years F&B operational or design experience preferred
  • Ability to travel (including internationally) as required
  • Driver’s license and passport
  • Requires strong computer skills and strong working knowledge of Microsoft Office
  • Must possess outstanding organizational, interpersonal, and administrative skills, as well as excellent attention to detail
  • Bachelor’s Degree or equivalent experience
